Cherry Marius 2024 - Barrel Aged saison

2024 Cherry Marius - 6% Barrel Aged Fruited Saison. Our annual Marius release features our classic Cherry variant this year. Marius began its journey as a light saison built from barley and spelt from @DeerCreekMalt; and European hops. It was fermented with our Foraged Yeast Culture before being racked into used wine barrels with our mixed culture, where it aged for roughly a year. We selected a blend of barrels and transferred the beer onto fresh tart cherries from @3SpringsFruit. Finally it was bottle conditioned for a final round of fermentation. This batch is presently showing notes of tart cherry pie, strawberry hard candies (the ones where the wrapper looks like a strawberry), almondy cherry pits, whiffs of baking cinnamon, vanilla oak, and nice zippy acidity.
