Hold on everyone, this one is going to get nerdy! Phototaxis is our new hazy IPA featuring two of our favorite hops, Chinook and Nelson Sauvin! We've always found the Michigan grown Chinook consistently delivers the classic resinous pine and juicy pineapple notes. Nelson Sauvin also derives its signature gooseberry and passion fruit flavors from its unique terroir in New Zealand.
A few months ago we were lucky enough to sit down with @HopRevolution who we source our Nelson from, and learned quite a bit about their farming techniques. We found the lots of Nelson which are picked in the earliest part of the harvest window better showcase those unique wine grape and lighter tropical characteristics that we love so much. With the help of @HopRevolution we are able to get those specific hops and give you our favorite Nelson experience in a glass!
Photatixis is a 6% hazy IPA brewed with American two-row barley and a light dose of flaked oats. Nelson and Chinook were added in the whirlpool and a hefty dose of the same combo in the dry-hopper. We're getting whiffs of classic NZ Sauvignon Blanc and pithy orange peel. It has those awesome gooseberry and light tropical notes and balanced by classic American pine and citrus flavors underneath it all.
