The Poet - 4.8% Pale Lager.
We took a bit more of a Czech/Bohemian inspiration than usual for this little lager. We mashed in Bohemian floor malted pilsner barley with a double decoction, hopped it with some Hersbrucker and lots of Saaz, fermented it cold and slow with a Czech lager yeast, and spunded at the end of fermentation to capture all the natural carbonation from the tiniest and most flavorful bubbles.
It has rich notes of cold pastry dough, snappy white crackers, some ripe pear, lots of classic beer flavor, miscellaneous dry herbs, a fresh crack of a peppercorn, a zippy bitterness, and a dry finish. Sometimes the small pale lagers have the most to say.
