Marius Peach - 6% Barrel Aged Fruited Saison. Our annual Marius release returns! This year we chose to use beautiful peaches from Three Springs Fruit Farm. We added roughly 2 pounds of peaches per gallon of beer to a handful of select barrels of mature saison. The base saison is built from a base of barley, wheat, and spelt from @DeerCreekMalt; hopped with aged and fresh European hops; fermented with our Foraged Yeast Culture; and aged in oak wine barrels with our mixed culture. After spending time on the peaches, the beer is primed and conditioned in the bottle or keg, for a final round of refermentation. The peach character of this batch of Marius seems quite special, really jumps out of the glass with aromas of summer.
We’re getting notes of fuzzy peach slumber parties, clean oak, evolved brettanomyces funk, a happy acidity, still some Juicy Fruit saison fermentation flavor, a wild herbaceousness, and some vanilla focused homemade pastries.
