Cyclical Dreams - 6% Barrel Aged Saison. A blend of saisons brewed with local grains from @DeerCreekMalt and hopped with aged and fresh dried hops, fermented with our foraged yeast culture, and aged in used wine barrels and large oak puncheons. As we’ve expanded into our new brewery location, we’ve been slowly adding more oak wine barrels to our cellar. This has given us an even greater palette with which to compose some fun blends of aged saisons.
Cyclical Dreams is made of saisons with similar grain bills, but of varying ages. We’re finding notes of dried chamomile, mango chutney, citrus bubble gum, earthy grapefruit pith, ethereal cinnamon, toasted coconut, and freshly split oak.
