Collective Consciousness - 6% Barrel Aged Honey Saison. This is a real beautiful beer brewed with barley and wheat from @DeerCreekMalt; hopped with attic aged hops and fresh Hersbrucker; fermented with our Foraged Yeast Culture and conditioned on honey from our friends @KaraJoBeeFarm. It was racked into used wine barrels and conditioned for roughly two years before being bottle conditioned with more honey. It has a real balanced character of floral honey aromatics, beeswax, miscellaneous Saison esters, gentle oak, tamarind soda, appropriate acidity, and a real classy Saison Joie de Vivre.
