All of a Sudden It’s a Different World - 6% Barrel-Aged Saison with Raspberries and Blackberries.

We brewed this lovely ale with barley and spelt from @DeerCreekMalt, hopped it with aged and fresh hops, fermented it with our Foraged Yeast Culture, aged it in wine barrels with our mixed culture, conditioned it with raspberries and blackberries, and refermented it in the bottles. This one is really popping fresh fruit right now, but would definitely be suitable for aging. We’re currently getting notes of ripe bramble berry jam bands, sweet tangerine juice, refined oak, when cherry pits give you that almondy flavor, ethereal saison picnic dreams, Asian pear juice, a bit of tannin love, and all the funky acidic wild fermentation flavors you’d expect.
